Oatmeal Apricot Bars
Ingredients:
Cooking Spray
1 Cup All-purpose flour
¾ Cup Whole wheat flour
2 Cups Old fashioned rolled oats
1 Cup Splenda or sugar
1/3 Cup Canola oil
1/3 Cup Butter, cut into small pieces
1½ Tsp. Vanilla extract
1½ Cups Apricot Preserves (fruit based only, no sugar added)
Instructions:
- Preheat oven to 350 degrees. Spray 13" x 9" glass baking dish with cooking spray.
- Combine white & wheat flours, rolled oats, Splenda, canola oil, butter and vanilla in food processor.
- Pulse until mixture resembles a coarse meal. Press into the glass 13"x 9" dish.
- Evenly spread the apricot preserves over the oat mixture. Top with remaining oat mixture and gently press.
- Bake for 25-30 minutes or until golden brown. Mixture will firm up as it cools.
