Oatmeal Apricot Bars
Apricots

Ingredients:

Cooking Spray
1 Cup All-purpose flour
¾ Cup Whole wheat flour
2 Cups Old fashioned rolled oats
1 Cup Splenda or sugar
1/3 Cup Canola oil
1/3 Cup Butter, cut into small pieces
1½ Tsp. Vanilla extract
1½ Cups Apricot Preserves (fruit based only, no sugar added)

Instructions:

  1. Preheat oven to 350 degrees. Spray 13" x 9" glass baking dish with cooking spray.
  2. Combine white & wheat flours, rolled oats, Splenda, canola oil, butter and vanilla in food processor.
  3. Pulse until mixture resembles a coarse meal. Press into the glass 13"x 9" dish.
  4. Evenly spread the apricot preserves over the oat mixture. Top with remaining oat mixture and gently press.
  5. Bake for 25-30 minutes or until golden brown. Mixture will firm up as it cools.
